Scratch Mobile Kitchen

One of our favorite Colorado Springs local food trucks, founded in 2018 by old Briarhurst Manor chef Bryan Lovelace and his lovely wife Jillian, shortly after the global COVID outbreak. Scratch offers some of the best sandwiches, burgers, and wraps in town including their speciality 6 hour cooking Pork Belly sandwich, which comes with their signature blueberry BBQ sauce.

Pork Belly Sandwich

Chef Bryan Lovelace gives a unique experience with the taste of this creation. His work at Briarhurst Manor located in Manitou Springs gave him the knowledge to start his own business. The process he uses is cooking the pork belly in it's own fat for around 6-7 hours, after that he chills it and then slices it; finally the sandwich is seared on the flat top and it's covered with the signature blueberry BBQ sauce.
